After trying many different recipes and making a few alterations, this is definitely my 'go to' recipe for sugar cookies & icing now. Trust me, you will love these! They are great for any occasion and fun indoor activity to do with the kids, and you likely already have all the ingredients in your house already. I definitely recommend making your own icing too because that's probably the best part about these. This recipe is really easy to follow and practically impossible to mess up, and the cookies come out absolutely amazing, & especially great for cookie cutting or cookie bouquets. </p><p>20 minute prep time, 8 minute bake time, & yields about 5 dozen cookies.</p><h3 style="text-align: left;">What You'll Need:</h3><p>- 4 large eggs</p><p>- 1 1/2 cup coconut oil (or 1 1/2 cup butter)</p><p>- 5 cups flour (I've done this with half almond flour and they came out amazing)</p><p>- 3 cups sugar</p><p>- 2 tsp vanilla extract (ran out of vanilla extract in the past and these still taste amazing without it)</p><p>- 2 tsp baking powder</p><p>- 1 tsp salt</p><h3 style="text-align: left;">For the Icing:</h3><p>- 4 cups confectioners' sugar</p><p>- 1/2 cup coconut oil or vegetable oil (or softened butter)</p><p>- 5 tablespoons vanilla almond milk (or regular milk, but the vanilla almond milk tastes awesome)</p><p>- 1 tsp vanilla extract (optional - I've done it with and without)</p><p>- optional food coloring</p><h3 style="text-align: left;">Directions:</h3><p>1. In a large bowl, cream together butter or oil and sugar until smooth.</p><p>2. Beat in the eggs and vanilla extract.</p><p>3. Stir in the flour, baking powder, and salt.</p><p>4. Cover, and chill dough for at least one hour (or overnight).</p><p>5. Preheat oven to 400 degrees F.</p><p>6. Roll out dough on floured surface about 1/4 inch thick.</p><p>7. Cut into shapes with cookie cutters & place cookies an inch apart on ungreased cookie sheets.</p><p>8. Bake 6 to 8 minutes in preheated oven. Cool completely.</p><h3 style="text-align: left;">For the Icing:</h3><p>1. In a large bowl, cream together the confectioners' sugar and oil until smooth, the mix in the milk and vanilla extract until smooth.</p><p>2. All you need is a green stamp pad (make sure you have the washable kind for easy clean ups), a small stretch of red ribbon, and paper. You could also do this on a canvas or a handkerchief or whatever else you have in your little craft stash. I definitely had so much more fun picking things out and decorating for our little girl than I did with Lelya's nursery, My whole pregnancy I swear I knew we were having a girl so I started planning and collecting little things for her ever since the positive pregnancy test. I really love this little space, and sometimes when the babes are sleeping and I have some free time I find myself making my way to her room, sitting in the rocking chair and rocking myself back and forth with a cup of tea or my computer, or sometimes just sitting and thinking quietly to myself.</p><p>This room is really teeny, which we renovated from an old music studio. It had no closet so we Chris built the shelving and clothing rack and hung up some yellow gingham curtains for closet doors (also did these curtain closet doors in Lelya's 'big girl' room). The crib and changing table were the only things we have in here passed down from Landon, and I tried really hard not to spend much money on everything else. I'm actually really proud of all the re-purposing and recycling I managed in here - The rocking chair was Aziz' mom's (the same one she used in her kids' nurseries), the end table and wooden heart wall shelf Aziz' dad left here for us. This fall? I'll take a bit more chocolate. These pumpkin chocolate chip cookies are really good, easier for kids to eat & just "grab 'n go" But I'm not sure if it's even the cookies themselves, but something about fall finally here (which I've also equated with the baby's due date), and being in a toasty warm house while it's cool & crisp outside with the warm, festive scent of pumpkin spice baking in the oven. </p><p>Or maybe it is just the cookies.</p><p>This recipe yields a ton, about 3 dozen cookies or more depending on how big you make each, and although I think usually most homemade cookies taste best right out of the oven, these lil cooks might taste even better the next day. So there's plenty to share & be sure save some for tomorrow :)</p><h3 style="text-align: left;">What You'll Need:</h3><p>- 4 cups flour (wheat or white, I used a mixture of both)</p><p>- 1 can pumpkin puree</p><p>- 2 cups brown sugar</p><p>- 1 cup white sugar</p><p>- 2 cups quick rolled oats (you can leave these out if you want to, I just love oatmeal in cookies)</p><p>- 1 egg</p><p>- 2 1/2 cups melted butter</p><p>- 1 tsp vanilla extract</p><p>- 2 tsp pumpkin spice</p><p>- 1 tsp ground cinnamon</p><p>- 1 tsp ground nutmeg</p><p>- 1 tsp salt</p><p>- 2 tsp baking soda</p><p>- 1 tsp baking powder</p><p>- 2 cups semi-sweet chocolate chips</p><p>*sidenote: I never said these were healthy. Scoop out your cookies and place on baking sheet. I used an ice cream scoop & dropped dough balls on the sheet in about 1" chunks and pressed down on the tops a little. They look like they're gonna be teeny but they puff up quite a bit. Plus, smaller cookies have less calories so you can eat more. Duh.</p><p>7. Throw these bad boys in the oven & bake until the bottoms just start to get golden brown, about 10-12 minutes.</p><p>8. After almost cutting my finger off & seriously injuring myself while chopping up the raw butternut squash, I made a few adjustments to make this recipe safer & easier to make. It tastes just as good, just prepared and cooked a little differently. Still delicious and still serves an army. Just put half of it away in my freezer for later. Hope you enjoy :)</p><h3 style="text-align: left;">What You'll Need:</h3><p>- 4 cups butternut squash, peeled, seeded, and cut into chunks</p><p>- 3 cups elbow macaroni</p><p>- 2 3/4 cup milk or milk substitute</p><p>- 1/4 cup all purpose flour (wheat or white)</p><p>- 8 oz or 2 cups shredded cheese. I used extra sharp cheddar cheese but other cheeses that taste amazing with the butternut squash are Gruyere and fontina cheese.</p><p>- 8 slices bacon (optional. turkey or regular bacon).</p><p>- 2 chopped sweet onions</p><p>- fresh parsley or sage (or dried if you don't have any fresh)</p><p>- fresh shredded mozzarella or parmesan cheese to top</p><p>- Optional bread crumbs to sprinkle on top</p><h3 style="text-align: left;">Directions:</h3><p>1. Preheat oven to 425.</p><p>2. Cook pasta according to directions, drain, transfer to a large bowl and set aside.</p><p>3. Peel and cut butternut squash in half. Place on baking dish and cook at 425 for about 20 minutes or until soft when pierced with a fork.</p><p>4. In a medium pot, combine the milk, flour, and shredded cheese over medium heat until melted and keep warm.</p><p>5. Cook chopped onions in skillet with olive oil until onions are a golden brown.</p><p>*Optional: cook bacon in skillet and crumble. Can add to the mac or keep on the side. I'm still not a meat eater, but everyone else says it's amazing with the bacon.</p><p>6. When squash is done cooking, mash or cut into chunks and combine with milk/cheese mixture and onions and then add all to the macaroni bowl.</p><p>7. Optional: stir breadcrumbs in with melted butter and sprinkle over dish.</p><p>8. Sprinkle shredded mozzarella or parmesan cheese over dish.</p><p>9. No more traveling for this third trimester mama! But it's been a good week, went on a few really nice dates with Aziz, got lots accomplished around the house, Lelya was able to start school on time, & I became an official PTA mom :) L's first day of (orientation) preschool was yesterday and the first actual day of school was today, and I'm she's loving it. The bus picks her up at 8:30, I kiss & wave her goodbye, and then I quietly sit in the kitchen by myself for 30 minutes without anyone asking me for any snacks. Then I run errands without toting a hefty little toddler in tow. Simple joys. But I know these 3 hours every morning will be even more clutch when baby girl gets here.
Speaking of, I've been in serious nest mode, absolutely obsessed with renovating & decorating her nursery, which we're transforming from an old music studio. It's a very small room upstairs that had no closet so we've had to do some painting and construction work for all her itty bitty clothes & shoes. Lelya has been quite the little helper and puts on her little construction belt and hammers & paints away in her room and talks excitedly about "building a house for baby sister." She's been nothing short of the best kid ever lately. Thanks to a few good friends & my SIL who have little girls, we've received A TON of sweet hand me downs and her little closet is already filled to the brim with tiny little pink clothes. I'm pretty sure she could wear a different outfit every single day for her entire first year - no joke. I have a sneaking suspicion that she's going to get here before her due date so I've been in crazy prep mode, trying to get everything I need and situated for her arrival. (Her hospital bag may or may not already be packed & ready to go ;))

We're so extremely proud of her -- she's not delayed at all anymore in terms of her vocabulary and just a little bit in terms of formulating sentences. After failing my first glucose test, I had to go back for a 3-hour test where I drank another sugar drink and had my blood drawn 4 times every three hours to test how my body processed the sugar. I gained a whopping 6 lbs since my last OB appointment 2 weeks ago, weighing in at 138 with an overall gain of 16 lbs, so from here on out, trying to only gain 1 lb a week to cap the gain at a total of 25-30 lbs. But still getting this preggo belly to the gym 5x a week! Should feel baby kick at least 6-7 times 30 minutes after eating throughout the course of an hour. I'm also now comforted to know that IF I go into preterm labor right now, chances of her survival and becoming a healthy & thriving baby are very, very likely. I'm craving lots of oranges and cereal (apparently baby needs lots of vitamin C & calcium at this point, so makes sense), and experiencing some awful acid reflux. My heart absolutely melts when I see her interact with the baby doll...she feeds her bottles, carries her around carefully, 'reads' her his books, takes her for strolls around the house in her little baby carriage, and puts his crocs on her little naked baby feet. The icing on the cake is watching her put her to sleep with her in her bed, wrapping her up in her beloved blankies (aka "treaties") -- You guys, she doesn't share those things with anyone.

I think there's also something about a warm conversation with a friend and a good festive drink in hand that just go so well together. So instead of splurging on Starbucks, I think what better way to treat yourself as autumn approaches than with some homemade chai tea lattes. So cozy up with your honey or invite a girlfriend over to enjoy these delicious chai tea lattes, maybe light a fall scented candle & bake some <a href="https://www.mummascorner.com/2023/12/pumpkin-spice-bread.html">pumpkin spice bread</a> or muffins while you're at it ;)</p><h3 style="text-align: left;">What You'll Need:</h3><p>- 2 giant mugs (because giant mugs are just more fun to cozy up with)</p><p>- 4 organic chai tea bags</p><p>- water to boil (enough for 2 servings of tea)</p><p>- 2 cups milk or milk substitute (I used almond milk)</p><p>- 1/4 cup desired sweetener (I think brown sugar tastes really good but you can use regular sugar, agave, or whatever your preference)</p><p>- 4 Tbsp French Vanilla refrigerated non-dairy creamer</p><h3 style="text-align: left;">Directions:</h3><p>1. Place 2 chai tea bags in each mug.</p><p>2. Boil enough water on stovetop to fill each mug about 3/4 full.</p><p>3. Pour boiling water into mugs with tea bags. Let tea bags steep for about 4 minutes. Remove tea bags.</p><p>4. While tea is steeping, make the creamer part:</p><p> -Place 2 cups milk, 1/4 cup sweetener of your choice, and 4 Tbsp French Vanilla creamer in a pot</p><p> -Heat on medium low heat until hot</p><p> -Pour into mugs with the tea</p><p> -Taste for desired sweetness. You may have some creamer left over, depending on the size of your mug and how sweet you like the drink to be.</p><p>5. Serve with optional whipped cream topping and nutmeg, if desired. It is absolutely delicious, although the picture really doesn't do it much justice - it's kind of hard to take a pretty picture of mashed potatoes. This dish is really the perfect comfort food that is for once loaded with healthy veggies instead of simple carbs - and you honestly can't taste much of a difference between the potatoes and cauliflower anyway. You could even leave out the potatoes and do a whole head of cauliflower, but I like the fluffier consistency that comes with adding the potatoes. You can definitely doctor this up but I personally think the roasted kale makes this dish so don't leave it out, but think it could also work well with chives or scallions, eggplant, &/or collard greens. I hope you try these for yourself, you won't be disappointed!</p><h3 style="text-align: left;">What You'll Need:</h3><p>- Half a bag of potatoes (I would recommend going organic here, as potatoes are among the top "dirty dozen" fruits and veggies of 2013 highest in pesticides)</p><p>- Half a head of cauliflower</p><p>- 1 bunch kale ripped up into bite sized pieces (organic if you can, but on the bottom of the list)</p><p>- 1 chopped yellow onion</p><p>- 3 tablespoons garlic (fresh or minced)</p><p>- olive oil and milk or milk substitute</p><p>- salt & pepper</p><h3 style="text-align: left;">Directions:</h3><p>- Preheat oven to 350.</p><p>- In one large pot, boil potatoes and cauliflower over high heat. Sidenote: I never peel my potatoes, as the skins are packed with all the nutrients.</p><p>- Sautee onion and garlic in olive oil over medium heat until translucent in appearance.</p><p>- Lay your kale over 1-2 baking pans (doesn't need to be laid flat), drizzle in olive oil and salt and pepper. Been feeling incredible lately and full of energy and high spirits. Partly due to the newfound 3 HOURS of 'me' time I now have every morning thanks to summer school :)
We had the big 20-week ultrasound this morning as well as echocardiogram (for those of you who don't know, Aziz had a brother who passed away at 9 months of a congenital heart defect) and everything looks great. Healthy baby, strong heart, internal organs, limbs, fingers, toes, everything is exactly as it should be and we are still measuring right on mark for a due date of 11/12/13. I have been on cloud 9 all day, so unbelievably happy and relieved beyond words that baby is healthy and developing 100% where he/she should be -- I may or may not have started crying as soon as we saw him/her on the screen. And that little nugget is quite the shaker and mover! (S)he wouldn't keep still and was kicking and dancing all over the place. And would NOT give us a profile view - (s)he insisted on a full frontal and SMILED straight at us the whole time. Seriously it was so freaky and really funny, like (s)he knew it was his/her big debut. But because the full frontal pics are a little scary (baby won't start chubbing up until at least a few more weeks and still has the hollow alien/skeletal face), I have posted the one profile pic we managed to snag from him/her.
I went into the appointment feeling deep down in my gut we have a girl but now am starting to think there might be a little baby sister in there! Cannot wait to find out with everyone at our gender reveal party on Sunday. This literally took me under a minute to whip up -- it is SO SO easy, you just combine all the ingredients in a blender and blend. And DELICIOUS. In fact I am eating it as I type right now with some pretzels and olives :P It's also a really great healthy way to get in some protein for you vegan/vegetarians out there! Enjoy!</p><h3 style="text-align: left;">What You'll Need:</h3><p>- 2 cans of chickpeas or garbanzo beans (drained)</p><p>- 2 tablespoons of tahini (a paste found in the ethnic or middle eastern section of food store)</p><p>- 1/2 cup of water</p><p>- juice of half a lemon or lime (or more, to taste) </p><p>- 1/4 teaspoon of salt</p><p>- 1/4 (approximate) teaspoon of ground black pepper</p><p>- 2 tablespoons fresh minced garlic (or more, to taste)</p><h3 style="text-align: left;">Directions:</h3><p>1. Combine all ingredients in blender and pulse until smooth.</p><p>2. We woke up bright 'n early to get ready for the first day of summer school and put her on her new school bus to her new school. Oh, no crying or separation anxiety at all for this girl! She was a happy little clam all buckled in as we waved to her in the driveway and I shed just a little tear. Boy oh boy does time fly fast....I packed chocolate cookies (her fave) for her class and the teacher made her a paper crown and they all sang to her at school and I'm sure she absolutely loved it and basked in her birthday glory all day.</p><p>After the half a day at preschool we took her swimming at the pool and enjoyed the beautiful 85-degree sun while watching Lelya swim like a little fish and make new water baby friends. Seriously this kid is AMAZING in the water and is already swimming! If you count doing the doggie paddle with a life vest on swimming, which I do. She goes in over her head no problem, does back floats, keeps her mouth closed from all the water, blows bubbles, jumps in the deep end and dunks under water and pretty much has the absolute time of her life. (Sorry, no pictures, too busy watching her and having fun).</p><p>We had a late lunch on the patio at the pool and then afterwards we got in the car to take Lelya on a real live choo choo train. Girl oh girl was this little one in heaven. We took her on the cta downtown and changed lines a few times and she would jump up and down and point excitedly at all the passing trains and there was nothing that could have happened to wipe the ear-to-ear grin from her face.</p><p>After the choo choo, we headed home for some presents, pizza, cake, & ice cream. The day was purposely filled with all of her favorite things in the world and it makes me so happy to see her so happy and her face lit up with so much joy. We decided not to throw her a party this year and do all her favorite things instead, and I'm so happy we did. I know we're both excited, but it's a double edge sword for me. I think about Newtown and I have a crazy urge to want to protect you under my wings forever. I'm nervous about other kids being mean, exclusive, and bullying. And it breaks my heart to see other kids be mean to you for no reason, especially when your intentions are always so kind hearted. I'm worried that you don't yet know how to speak up for yourself in those situations and I can't be there to help you feel better. But I realize I can't hold onto you forever and the only way for you to grow and experience life is for me to let you.</p><p>I know sometimes I get anxious. I worry that we don’t have our own house yet, I worry that we don’t have enough money in the bank, and that I don't have any idea of what the future will bring. But I know what we do have is enough. We have each other, we have papa, and we will have a new baby sister or brother coming very soon too, and I know that there is more than enough love in this family to go around. Sometimes I still wonder how I’m going to be “enough” for you -- enough of a mother, enough of an example, enough of a caregiver. I wonder how I can do this job by myself and then twice that job when baby sister or brother is born. But then I hear your little voice call out for me when you're in need, and feel your little arms wrap around my leg as if I am your safe haven, and I see the excitement in your eyes when you see me for the first time after I've been gone, and you run to me and hug me. And I realize, I’m already doing it. And I'm doing enough.</p><p><br /></p><p>Another baby will be coming into our family in just a few short months, and we hope even another after that, but you will always be the one who changed me. The one that gave me the most important role that I have ever held in my life, the role of a mother. You will always be the person who gifted me this perspective and kindness and patience beyond anything I ever remotely had before.</p><p><br /></p><p>I used to always yearn for adventure, no matter what I would always want more. Preheat oven to 400 degrees. Line 12-cups in muffin tins with paper liners.</p><p><br /></p><p>2. Toss together strawberries and sugar. Using a potato masher, lightly mash berries & set aside.</p><p><br /></p><p>3. In a large bowl, mix together all the dry ingredients: the flour, baking powder, baking soda, salt, cinnamon, rolled oats, and ground flax seed. In a glass 2-quart measuring cup or a medium bowl, combine all the wet ingredients: milk, oil, egg, and vanilla.</p><p><br /></p><p>4. Pour in the milk mixture and the berry mixture into the dry flour mixture. Fold just until combined, be careful not to mix too thoroughly or else muffins will have a "harder" texture.</p><p><br /></p><p>5. Using a large spoon, divide the batter among the muffin cups. Made with plain greek yogurt instead of sour cream, this dip is much healthier than than other cold spinach dips and tastes absolutely amazing. I made this according to my own taste and preference but of course you can feel free to doctor it up a bit by adding water chestnuts or celery or other crunchy chopped vegetables and play around with what you like. I realized I haven't done any weekly baby bump photos with weekly feelings, cravings, etc. so I'll try to make up for that now. (S)he's about the size of an avacado and 4 1/2 inches long, & heart beat is 150 bpm, very strong, fast and most importantly, very healthy. This year I received an extra special Mother's Day gift -- the distinct and unmistakable sensation of little kicks and flutters from our lil baby boy or girl. (S)he's definitely a spunky one, that I can tell already :)</p><p>I've been struggling with awful allergies and recent headaches (unfortunately can't take anything for the allergies), & have terrible baby brain already. During the first trimester I felt very sick and nauseous all the time, which is now (for the most part) gone, thank God. I still get random waves of nausea but they are few & far between, and thankfully only 2 of these has resulted in actual vomiting. As for cravings....nothing too weird at all. It's been quite the opposite, most food items have been totally grossing me out or don't taste good to me at all. I've mostly just been craving lots of fresh fruit and vegetables. Still not eating any meat, but adding in a little whey protein powder in my morning smoothies. Craving a few sweets here & there, but only the finest gourmet cookies, cake, & pastries, which is definitely atypical for me. And sushi. Dear Lord that's all this baby wants. I've treated myself to sushi a few times, only ordering cooked rolls (eel, shrimp, calamari, crab) and it is the only thing I think I could eat nonstop throughout this entire pregnancy and not get sick of.</p><p>I'm really excited to be pregnant during the summer months and am determined not to turn into a blimp like I was with Lelya (48 lb weight gain is not happening this time around). So far I've only gained 2-4 lbs -- I'm not exactly sure how much I was pre-pregnancy, but I only weighed in @ 122 today, & I'm hoping to stay on this good, healthy track I've set myself on.</p><p>I still have the feeling I'm carrying a little girl because all my pregnancy symptoms are exact opposite of what I was like when preggo with L. But we have to wait another 3 weeks until we find out the sex - gah! At which point, I have plans for a fun (yet low-key) gender reveal barbecue. Thinking I am going to forgo my original plans of the gender reveal cake and surprise myself with a box full of [pink or blue] balloons.
